How to customize the theme with Outlook mail.
Apply stationery, backgrounds, or themes to email messages

To change Outlook’s background pattern and theme for the whole application, you can follow these steps1:

Click on the File tab in the navigation ribbon.
Click on Options.
Navigate to Personalize your copy of Microsoft Office under the General section.
Choose a background pattern from the Office Background dropdown list.
Choose a theme from the Office Theme dropdown list.
Click OK to finish.
To change the theme for a single message you’re creating, you can follow these steps2:

Click the Home tab.
In the New group, click New Items, point to Email Message Using, and then click More Stationery.
Under Choose a Theme, click the theme or stationery that you want, and then click OK.
Compose and send your message.
To change the default theme for all messages you send, you can follow these steps2:

Click the File tab.
Click Options.
Click Mail (or Ease of Access) and click the Stationery and Fonts button.
On the Personal Stationery tab, click Theme.
Under Choose a Theme, click the theme or stationery that you want, and then click OK.
Select the font options that you want.
To create your own theme, you can follow these steps2:

Open a new message and customize the fonts, bullet points, background color, and anything else you want.

How to customize theme with Outlook mail.

If you want to change the appearance of your Outlook mail, you can customize the theme with different colors, fonts and backgrounds. Here are the steps to do it:

1. Open Outlook and click on the File tab.
2. Select Options and then click on Mail.
3. Under Compose messages, click on Stationery and Fonts.
4. In the Theme section, click on Theme… to choose a predefined theme or create your own.
5. You can also change the font style, size and color for new messages and replies/forwards.
6. Click OK to save your changes and close the dialog boxes.
